Fruit Salad

Reading "When Life Gives You Pears" by Jeannie Gaffigan.  Throughout my life I tend to gravitate to the stories of those who are overcomers for their inspiration on how to get over the inevitable hurtles we must face in this journey of life.
I am enjoying this book as I have her husband Jim Gaffigan's book "Dad Is Fat", during our family trip to The Grand Canyon via Amtrak. There was a lengthy layover due to the weather washing out some track and then the cargo trains taking first priority. It gave me time to enjoy Jim's humor. SO thankful for good clean humor!!!
No matter what type fruit life sends us might as well make fruit salad! lol
Here is a recipe I hope to try this season:
1 jar (25 oz) chunky applesauce
1 can (21 oz) cherry pie filling
1 can (20 oz) pineapple chunks, undrained
1 can (15-1/4 oz) sliced peaches, undrained
1 can (15-1/4 oz) apricot halves, undrained
1 can (15 oz) mandarin oranges, undrained
1 cup packed brown sugar
1 teaspoon ground cinnamon
Place the first six ingredients in a 5-qt. slow cooker and stir gently.  Combine brown sugar and cinnamon; sprinkle over fruit mixture.  Cover and cook on low for 3-4 hours.  Yield: 16 servings.
